The content of 21 amino acids, 11 sugar, 6 organic acids, 5 inorganic ions, 52 mineral and trace elements in Chardonnay bleeding sap collected in 2 vineyards is shown. Mineral composition is analysed also in the xylem sap collected at veraison from the 8th leaf of shoots. Glutamine is the most abundant amino acid, followed by arginine, aspartic and glutamic acids. Saccharose, inositol, ribose, mannitol, quebrachitol, raffinose and sorbitol were present in amounts lesser than 300 M. Malic and citric acids formed ca. the 75% of total acidic content but were in different ratio into the 2 vineyards. Shikimic acid was detected only in a early phase of bleeding. Among mineral element, K, Ca, Mg, P, Na, B, Mn, Zn and Sr were the most abundant in bleeding sap. Mineral content is higher at bleed than at veraison and we observed a good correlation between the principal macro- and micro-nutrient (P, K, Mg, Ca, Fe, Mn, Zn, Cu, B, Mo, Na, Co) content into the 2 types of sample. Iron does not seem to be remobilised at budburst in appreciable amounts but it is probably taken up by plant after canopy development.
